5-10 Brussel sprouts (quartered)

1/2 cup red onion (diced)

1 cup collard greens (chopped)

Beyond sausage links or patties

Simply eggless

Olive oil

Salt & pepper to taste

Sazon seasoning to taste

Salsa or diced tomatoes (optional)
